Thank you very much for this lovely recipe.
...Hi,

Thank you very much for this lovely recipe.

I live in Canary Islands and here it is difficult to find polenta at all -we use corn flour a lot though. So I had to make this recipe using already cooked polenta and far from becoming a mush, the polenta ended up hard. I was wondering if this is supposed to happen or if the cake's texture should be smooth and Eva en el arcahttps://www.blogger.com/profile/09710081156520970716noreply@blogger.comtag:blogger.com,1999:blog-1601215681017407756.post-21720360197286027842011-02-18T22:07:48.434+01:002011-02-18T22:07:48.434+01:00mmm! Or at least at Whole Foods they distinguish between the two. They call polenta the same as corn grits, whereas cornmeal is much finer and more like a flour.heather jacobsenhttp://gluten-free-foodie.netnoreply@blogger.comtag:blogger.com,1999:blog-1601215681017407756.post-17207421857954670182010-12-27T09:11:03.279+01:002010-12-27T09:11:03.279+01:00i tend to prefer my polenta super creamy and loade...i tend to prefer my polenta super creamy and loaded with cheese, but this is a refreshing alternative. happy holidays, kate!gracehttps://www.blogger.com/profile/02368850949339758604noreply@blogger.comtag:blogger.com,1999:blog-1601215681017407756.post-73740642590747936172010-12-24T00:10:57.938+01:002010-12-24T00:10:57.938+01:00I should be experimenting more with different grai...I should be experimenting more with different grains too, just to try new things. I've been noticing a trend in cooking blogs to just refer to cornmeal as 'polenta'. Polenta is already cooked - which makes for some confusion.
